If you’re looking for savory noodles with a fresh veggie crunch – look no further! Profile Coach Brandi Hart created this incredibly tasty salad recipe with visions of Thai Spring Rolls dipped in Peanut Sauce dancing through her head. This simple recipe is simply delicious and makes a great Profile-approved side with a little kick!

Prep Time: 10 minutes / Cook Time: 1 minute
Number of Servings: 4
Serving Size: ¼ of the package of noodles
Ingredients:
- 1 box Profile Pasta
- 1 cucumber, sliced in strips
- 1 red bell pepper or 8 mini peppers, sliced in strips
- ½ cup shredded carrot
- ¼ cup cilantro
- ¼ cup green onion
- Sauce:
- 4T PB2
- 2T soy sauce
- 2T water
- 2 T rice vinegar
- ¼ tsp sriracha
- ½ tsp ground ginger
- 2 cloves garlic
Directions:
Cook Profile Pasta according to package directions and drain. Rinse under cold water. Place cooled noodles in a large bowl and toss with cucumber, pepper, carrots, cilantro, and green onion. In a small bowl, whisk together the sauce ingredients and drizzle sauce over noodles. Serve cold and enjoy thoroughly!
Tip:
If you love the sauce, it can be re-created and used in many other dishes! Feel free to substitute mint or basil if you’re not much of a cilantro person.
