Cauliflower Fried Rice

Servings: 4


  • 1 head of cauliflower
  • 1 Tbsp. canola or olive oil
  • 2 eggs
  • 1 tsp. sesame oil
  • 3 cloves of garlic, minced
  • 1 onion, chopped
  • 1 1/2 cups vegetables of your choice – ex: peppers, mushrooms, bean sprouts
  • 4 green onions
  • 4 Tbsp. low sodium soy sauce


  1. Put cauliflower in batches in the food processor and process. You can also use a box grater if you do not have a food processor
  2. Crack eggs into bowl and scramble, add sesame oil and set aside
  3. Place oil in wok or sauté pan over medium heat
  4. Add onions and garlic and cook until onion softens
  5. Add additional vegetables and cook for 1 minute
  6. Meanwhile in a separate small sauté pan sprayed with cooking spray, cook egg
  7. Add green onion and cauliflower and cook for 4 minutes
  8. Add egg and soy sauce
  9. Season with salt and pepper
