Cauliflower Fried Rice

  • Food Processor


  • 1 head of cauliflower
  • 1 Tbsp. canola or olive oil
  • 2 eggs
  • 1 tsp. sesame oil
  • 3 cloves of garlic minced
  • 1 onion chopped
  • 1 1/2 cups vegetables of your choice – ex: peppers mushrooms, bean sprouts
  • 4 green onions
  • 4 Tbsp. low sodium soy sauce


  • Put cauliflower in batches in the food processor and process. You can also use a box grater if you do not have a food processor
  • Crack eggs into bowl and scramble, add sesame oil and set aside
  • Place oil in wok or sauté pan over medium heat
  • Add onions and garlic and cook until onion softens
  • Add additional vegetables and cook for 1 minute
  • Meanwhile in a separate small sauté pan sprayed with cooking spray, cook egg
  • Add green onion and cauliflower and cook for 4 minutes
  • Add egg and soy sauce
  • Season with salt and pepper
