Zucchini Garlic Bites Recipe

Use zucchini to make this healthy version of garlic bread bites. All you need is a cheese grater and an air fryer to whip up this tasty side dish/snack. 

Why Zucchini? 

Zucchini is a vegetable that is affordable and common in many home gardens. According to WedMD, zucchini is packed with many vitamins, minerals and antioxidants. It is a high fiber food that has a low calorie count. It is often used in baked, grilled or added to soups. It is rich in vitamin B6, which helps regulate blood glucose levels and helps limit the risk for diabetes. Zucchinis are also rich in folate, which is especially important during pregnancy. Cleveland Clinic states that studies show that higher levels of folate can lead to lower blood pressure and lower the risk of cardiovascular diseases. There are also studies that suggest that folate intake has been show to reduce the risk of getting Alzheimer's disease.

Zucchini Garlic Bites

These tasty Zucchini Bites are a great way to get your veggies in but also feel like you're having a treat! Try them in your air-fryer for that crispy "fried" taste.

  • Oven or air-fryer
  • Cheese grater
INGREDIENTS
  • 1 bag Profile Salt and Vinegar Chips crushed
  • 1 cup zucchini grated and drained
  • 1 egg whisked
  • ¼ cup parmesan cheese
  • 1-2 tsp. garlic
  • 1 Tbsp. parsley
  • 1 tsp. basil
  • 1 tsp. oregano
INSTRUCTIONS
  1. Preheat oven to 400 degrees. Lightly coat a baking sheet with non-stick spray. (or consider using your air-fryer!)
  2. Use a cheese grater to grate zucchini. Place in a paper towel and wring out the moisture.
  3. In a medium bowl, combine all ingredients except the marinara sauce and mix well.
  4. Shape mixture into small balls, using about a tablespoon of the mixture, and place on baking sheet.
  5. Bake for 15-18 minutes, or until golden. Serve with warm Profile Marinara Sauce.
