Garlic Mashed Cauliflower

A delicious, creamy side dish that will satisfy your mashed potato cravings.

Garlic Mashed Cauliflower

Serving size: 1 cup


  • 1 Cauliflower, medium sized head, raw
  • 1 Garlic and Herb Light cheese wedge
  • 1/2 cup Parmesan Cheese, fat-free, grated
  • 3 tsp. Garlic, minced, or to your taste
  • 1/2 cup Chicken Broth, low sodium and fat free
  • Dash of Black Pepper
  • 1 tsp. Salt or to your taste
  • Chives, fresh, chopped (optional)


  1. Wash and cut cauliflower into small pieces, put into a saucepan and top with water, boil 6 minutes
  2. Drain cauliflower and pat dry with paper towels to remove some of the liquid
  3. To a blender add cauliflower a little at a time to mash, put in a bowl, add more cauliflower to blender and rest of ingredients
  4. Combine all mashed cauliflower and stir to combine if necessary add in extra stock at little at a time to achieve desired consistency
  5. To serve top with fresh chopped chives and additional black pepper
