All-American Burgers

A fantastic alternative to the classic summer burger.
All American Burgers

INGREDIENTS
  • 4 3-4 oz. Lean ground beef patties or four vegetarian burgers
  • 4 large Lettuce leaves (romaine, bib leaf or iceberg)
  • 4 slices Tomato
  • 4 slices Red Onion
  • 2-3 slices Dill Pickles
  • Sugar-free ketchup and mustard
INSTRUCTIONS
  1. Grill burgers to an internal temperature of 145 degrees (64 C)
  2. Place on top of lettuce leaves along with the tomato, red onion, sliced dill pickle and sugar-free ketchup and mustard
NOTES
Profile Exchanges: 3 to 4 oz. of lean protein; 1/2 cup vegetables

Grilled Portabella Mushroom Burgers

Cut the cholesterol and savor the flavor of this vegetarian alternative to the hamburger. Balsamic marinade gives it a meaty taste that even a meat eater will enjoy!
Grilled Portabella Mushroom Burger
INGREDIENTS
  • 2 lg. Portabella Mushroom caps washed, dried and gills removed
  • 1 tsp. Profile Rosemary Balsamic Vinegar
  • 1 Clove Garlic minced
  • 2 tsp. Olive Oil
INSTRUCTIONS
  1. Marinate portabella caps in balsamic vinegar, oil, and garlic for 30 minutes.
  2. Grill mushrooms until hot and have nice char marks. Set aside to keep warm.
  3. To Serve place one mushroom on top of each Profile Burger Bun and serve with assorted toppings; tomato, spinach, grilled onions, salsa, Profile Cesar Dressing and dill pickles.
NOTES
Profile Exchange: One mushroom: 1 fat serving and 1 cup of vegetables 
 

Surf & Turf Kabob

Lean, mean and packed with protein, this scrumptious steak and shrimp on a skewer is perfectly portable for socializing at your Independence Day gathering.

INGREDIENTS
  • Marinade
  • 2 Cups Profile Balsamic Dressing
  • Kebabs
  • 1 lb. sirloin steak
  • 18 raw shrimp
INSTRUCTIONS
  1. Cut the steak into 1/2 – 1/4 in. cubes and place in a food safe bag or a nonmetallic dish.
  2. Combine steak with marinade and coat evenly. Refrigerate for 15 minutes up to 3 hours.
  3. Peel and devein the shrimp, leaving the tails attached.
  4. Add the shrimp to the marinade, toss to coat and marinate for an additional 5 minutes.
  5. Remove the steak and shrimp from the marinade.
  6. Chop 1 medium rutabaga into 1/4 in cubes.
  7. Thread onto metal or presoaked wooden skewers, alternating the steak with the shrimp.
  8. Brush kabobs generously with additional Profile dressing.
  9. Place kabobs onto a hot grill, rotating periodically until steak reaches an internal cooking temperature of 140° (medium rare).

Grilled Fruit

If you’re a fan of fruit, you’ll love this quick and easy side dish. Plus, grilled fruit makes a great dessert when paired with ice cream!

INGREDIENTS
  • 4 peaches
  • 4 pineapple rings
  • 1/2 package Profile Creamy Chocolate Shake Mix
INSTRUCTIONS
  1. Slice peaches in half and carve pineapple into rings.
  2. Mix 1/2 package of Profile Creamy Chocolate Shake Mix into pudding consistency
  3. Place fruit directly onto grill and flip after 2-3 minutes.
  4. Drizzle with chocolate and serve immediately.

Beef & Veggie Summer Sliders

If you ask me, everything tastes better grilled. Steaks, burgers, fish, veggies, fruit (yes, I said fruit)- it’s all delicious!As a mom to a picky eater, this recipe is one of my favorite ways to add extra veggies into my family’s diet. Although not all of my attempts to disguise veggies are successful, this one was! My family had no idea that their yummy sliders were loaded with nutrient dense veggies. And that, my friends, is what we call #winning.

INGREDIENTS
  • 1/4 head cauliflower
  • 1/2 Cup mushrooms
  • 1/2 medium onion
  • 1/4 Cup fresh parsley
  • 1 lb. lean ground beef
  • 1 large egg
  • 1 Tbsp Mrs. Dash Seasoning
INSTRUCTIONS
  1. Preheat grill. It should reach 300° – 350° before use.
  2. In a food processor, combine cauliflower, mushrooms, onion and parsley. Pulse until all veggies are finely chopped.
  3. In a medium bowl, mix vegetables with ground beef, egg and seasoning. Combine evenly and form into patties.
  4. Place on the grill and cook until internal cooking temperature has reached your desired level of doneness. For medium 160° and for well done 170°.
  5. Add toppings and condiments of choice and serve on a whole grain bun.
