Zucchini is chock full of antioxidants as well as having high fiber content which will make you feel full and aid in digestion.   1. Preheat oven to 400 degrees. Lightly coat a baking sheet with non-stick spray. (or consider using your air-fryer!)
  2. Use a cheese grater to grate zucchini. Place in a paper towel and wring out the moisture.
  3. In a medium bowl, combine all ingredients except the marinara sauce and mix well.
  4. Shape mixture into small balls, using about a tablespoon of the mixture, and place on baking sheet.
  5. Bake for 15-18 minutes, or until golden. Serve with warm Profile Marinara Sauce.

Fried Pickles

Depending on what part of the country you are from, you may know these as “frickles.” This classic bar food doesn’t have to be on your no-no list. INGREDIENTS
  • 1 package Profile Pancakes
  • 1 egg white
  • 1 tsp. garlic powder
  • 1 tsp. baking powder
  • 1 ½ – 2 Tbsp. of water
  • 1 small jar of dill pickle chips
INSTRUCTIONS
  1. Pat dry the pickle chips with a paper towel
  2. Combine Profile Pancake mix, garlic powder, and baking powder into large mixing
  3. Add egg white and water and mix all ingredients together
  4. Dip dill pickle chips in batter
  5. Add pickle chips into an Airfryer and bake for 8-10 minutes at 400 degrees
  6. Alternatively, place pickles on baking sheet and bake at 450 degrees for 8 minutes on each side
  7. Let cool and enjoy your fried pickles!

Tip: The secret to getting your air fryer fried pickles EXTRA CRISPY is to make sure you let the pickles drain out as much extra moisture as you can before frying. Put them in a strainer and then pat them dry.

  1. Preheat oven to 400 degrees or put then in your air fryer at 390 degrees.
  2. Slice all veggies into uniformly thin slices.
  3. In a bowl, toss veggies with the oil and Profile seasoning until evenly coated.
  4. Spread out on a baking pan lined with parchment paper. Bake for 10 minutes. Flip over. Bake another 5-10 minutes until crispy and slightly brown but not burnt.

If you’ve been around the world of low carb foods for awhile, you may know about the many varieties of high fiber/low carb tortillas in your local grocery store. They are available in almost every supermarket and most brands are just as good as the next. Look for the packaging to say “High Fiber” or “Low Carb.” Crisp these bad boys up using either the oven or air fryer, it's up to you!

  • 4 high fiber and low carb whole wheat tortillas
  • vegetable oil spray
  • herbs and spices to your taste
  • optional: salt and black pepper
INSTRUCTIONS
  • Preheat oven to 375 degrees and spray a cooking sheet with vegetable oil spray.
  • Stack tortilla rounds together and cut into 8 wedges.
  • Place on cooking sheet individually; do not stack or double up giving them room to toast.
  • Spray tops of tortilla wedges lightly with vegetable oil spray and toast till browned, about 5 minutes.
  • Remove pan from oven and turn over wedges to brown on other side for 5 minutes or until crisp.

Healthy Oven-baked Kale Chips

  • 4 oz fresh Kale
  • 1 T Extra Virgin Olive Oil
  • ¼ tsp salt
  • ¼ tsp garlic powder optional
  • Parchment paper
INGREDIENTS
  1. Preheat oven to 275 degrees or try it in an air fryer at 390 degrees.
  2. Wash and dry Kale, then cut out and discard center stems.
  3. Place ½ of Kale in the center of a paper towel and fold over to dry
  4. the Kale and to help flatten the Kale to make chips.
  5. Repeat with the other half.
  6. Cut the Kale into small pieces (2 inch diameter) to make about 40-45 chips.
  7. Line baking sheets with parchment paper and place Kale on a single layer. Note: You won't need the parchment paper if you use an air fryer.
  8. Using a pastry brush, dab a small amount of olive oil on each piece, then sprinkle with salt (and garlic powder).
  9. Bake 20 min until crisp but not brown.

Pro tip: the air fryer produces a similar, delicious result as deep frying without all of the oil!

  • 1 10 oz: pkg. frozen chopped spinach thawed and drained
  • 1/3 of English cucumber
  • 3 T fresh chopped chives or green onion
  • 1 1/2 cups of fat free Greek yogurt unsweetened
  • 2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper to taste
  • 1/2 tsp oregano leaves dried
  • 1/2 tsp basil leaves dried
INSTRUCTIONS
  1. Place thawed spinach on a piece of cheesecloth or onto two heavy duty paper towels
  2. Fold up and squeeze out all moisture.
  3. Add spinach to food processor and pulse to loosen up.
  4. Add English cucumber and pulse.
  5. Add rest of the ingredients and pulse.
  6. Place in a serving bowl.
  7. Serve surrounded with low carb veggies like Jicama sticks, celery, cucumber rounds, radish slices, steamed artichoke leaves, broccoli, cauliflower, dill pickle slices, carrot spears, red, green and yellow pepper strips.
