Pecan Pie Muffins Recipe

Ingredients

  • 1 package Profile Pancake mix

  • 1 package Profile Maple Pecan Shake
  • 2 eggs
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • 4 oz. water
  • 1 tbsp. sugar-free maple syrup
  • 8 pecans, chopped

Directions:

  1. Preheat oven to 350 degrees. Add 6 paper liners to a muffin tin or spray 6 muffin tins with vegetable oil spray, set aside.

  2. Whisk egg, add pancake and shake mix, baking powder, cinnamon, and chopped pecans.
  3. Mix in maple syrup and water, adding an additional 1-2 tsp. of water at a time, if needed.
  4. Divide batter into six muffin cups.
  5. Bake for approximately 20 minutes.
