  1. Preheat oven to 350 degrees. Spray a 6-count muffin pan with vegetable oil spray or use paper liners. Set aside.
  2. Whisk egg, add pancake and shake mix, baking powder, and cinnamon.
  3. Mix in water, adding an additional 1-2 tsp. of water at a time, if needed.
  4. Divide batter into six muffin cups.
  5. Bake for approximately 20 minutes, set aside for 5 minutes and enjoy your banana bread muffins!
