INGREDIENTS
  • 1 Cauliflower medium sized head, raw
  • 1 Garlic and Herb Light cheese wedge
  • 1/2 cup Parmesan Cheese fat-free, grated
  • 3 tsp. Garlic minced, or to your taste
  • 1/2 cup Chicken Broth low sodium and fat free
  • Dash of Black Pepper
  • 1 tsp. Salt or to your taste
  • Chives fresh, chopped (optional)
INSTRUCTIONS
  • Wash and cut cauliflower into small pieces, put into a saucepan and top with water, boil 6 minutes
  • Drain cauliflower and pat dry with paper towels to remove some of the liquid
  • To a blender add cauliflower a little at a time to mash, put in a bowl.
  • Add more cauliflower to blender and rest of ingredients
  • Combine all mashed cauliflower and stir to combine if necessary add in extra stock at little at a time to achieve desired consistency
  • To serve top with fresh chopped chives and additional black pepper
